Here you will find cold cuts, cheeses and fresh products from the region, such as the Prosciutto di San Daniele D.O.P. Selezione Terra Madre, cheeses from the dairy Latteria di Coderno and those from Upper Carnia pastures. We also stock dry and packaged products such as rice, pasta and gourmet goodies for incredibly delicious meals.

PROSCIUTTO DI SAN DANIELE D.O.P. TERRA MADRE SELECTION
A unique and exclusive selection of Prosciutto di San Daniele D.O.P. by TERRA MADRE SELECTION, available only in our SHOP and BISTROT.
THE SELECTION
The best legs are chosen based on their weight and size, excluding those that could show even the slightest defect in subsequent processing.
THE MAKING OF
After the legs are salted and pressed, they are ready to rest for about 3 months, while they are periodically checked, massaged to tone the meat as well as trimmed and cleaned.
A final tempering and washing prepares the legs for curing, which takes place in large, naturally ventilated rooms where the magic happens thanks to the famous San Daniele microclimate.
At the beginning and during the curing process the “stuccatura” is carried out, where according to tradition, the outer layers of the prosciutto are treated with an ancient mixture of lard, salt, pepper and rice flour to protect and soften it.
THE TERRA MADRE SELECTION
After branding, in which prosciutto samples are selected and subjected to analysis by the Prosciutto di San Daniele Consortium laboratory to check the quality, the Terra Madre master prosciutto maker carefully selects the prosciuttos from the best San Daniele producers.
The selected hams remain in the prosciutto factory to mature for a period of about 7 months during which the Terra Madre master prosciutto maker carries out continuous checks.
We select only the finest prosciuttos for you:
- available to enjoy at the BISTROT;
- on sale at the BISTROT and the SHOP thinly sliced, in pieces or as a whole.
